Elena Walch Beyond the Clouds 2017

Beyond the Clouds is a wine that, like few others, manages to capture the essence of enological France, proposed by the Domaine George company. Its name literally means "beyond the clouds", bearing witness to the evocative and magnificent scenery in which the vineyards grow. The main rows are located in the region of Burgundy, more precisely in the small municipality of Chablis, in a territory dominated by the gentle and pleasant hills. The climate is temperate and sees the presence of cold winters and hot summers, punctuated by mild autumns and springs. The cultivation system used is the simple spur with Guyot pruning, in a terroir that sees the presence of a high quantity of sandstones and marly components. The favorable sun exposure towards south / south-east guarantees excellent lighting conditions throughout the year. At the base of the label is 100% pure Chardonnay, one of the most famous and appreciated clear berry grapes. In the first decade of October, the harvest begins, which sees the manual selection of the best grapes and their soft pressing once in the company. The must is left to ferment in large steel tanks before being transferred to French oak barrels, where aging begins. The process takes about 6 months, after which the wine is bottled and left to age for 2 more months in the cellar.
