The Toscana Rosso Biserno of the Marchesi Antinori, represents the emblem of the Biserno Estate. It is produced mainly from Merlot and Cabernet Franc grapes, with the addition of a small quantity of Cabernet Sauvignon and Petit Verdot grapes which give complexity and intensity to the wine. The grapes, after being carefully selected, are harvested from the end of August to the beginning of October. After destemming and soft crushing, the alcoholic fermentation of the wine takes place in stainless steel tanks for 3 - 4 weeks at 28 ° C, while the malolactic fermentation takes place 40% in barriques and the remaining 40% in tanks 'steel. Subsequently the wine is aged for 40% in new French oak barrels for 16 months, and for the remaining part in barrels of one year of age. The vinification ends with a further refinement of the wine for 12 months in the bottle. The Toscana Rosso Biserno is characterized by an intense red color. The nose offers warm aromas of ripe red fruits, enriched with hints of spices and freshly ground coffee. On the palate it offers a complex olfactory profile with silky tannins. This is a full-bodied wine, which thanks to its perfect tannic balance, gives a perfect finish. It is excellent to combine with truffle risotto and game. It is ideal to serve with seasoned cheeses.
