Assembled on a basis of Chardonnay and Pinot Noir mostly classified among the Premiers Crus, with a share from 20 to 25% of reserve wines from the two previous vintages. 45% of Chardonnay from the Côte des Blancs and Montagne de Reims 55% from Pinot Noir from the Montagne de Reims and the Marne valley, of which 18-19% is vinified in red. Vinification: Manual harvest Alcoholic fermentation in thermoregulated stainless steel vats For red wine, short maceration and light extraction Malolactic fermentation Dosage: 9 g / l TASTING NOTES The color is a delicate garnet rose with slightly orange reflections. The effervescence is lively and light, with a persistent perlage. It is fresh and delicate on the nose, first of all offering a palette of exotic fruits (guava, lychee) and small red fruits (raspberry, cherry, wild strawberry). The notes of rose and pomegranate complete the complex and intense aromatic profile, dominated by not overly established primary aromas. At the tasting the attack is clear and full, enlivened by a sweet effervescence. The aromas of freshly picked red fruits are fully expressed. In this balance a delicious roundness and a pleasant freshness are combined, which is expressed with an elegant and invigorating touch of mint and pink grapefruit. FROM THE GLASS TO THE PLATE Ruinart Rosé is a Champagne of great conviviality, pleasant to be consumed at any time of the meal, from aperitif to dessert. It will be enhanced by a thinly sliced cured ham (San Daniele or Parma). Later, a salmon in semiconserva or prepared in Japanese in «tataki» will reveal its many facets. For the main course it can be accompanied by a leg of lamb from milk or a veal fillet cooked at low temperature. At the end of the meal it will be fully expressed with a soup of red fruits, enlivened by an excellent balsamic vinegar of Modena.
