The Bollinger Special Cuvée belongs to the famous hexagon tradition and looks like an excellent Bollinger company champagne, born in the first half of the 19th century. Produced in the Champagne region, the maison is located in the famous municipality of Ay, precisely in the Marne Valley. In the vast territory of 165 hectares there are numerous wine productions such as Chardonnay, Cuis, Pinot Meunier in Champvoisy and finally Pinot Noir in Ay, Avenay and Louvois etì Verzenay. The Bollinger Special Cuvée faces the world under another baptismal name, "Brut sans année", a name dating back to its date of birth that can be dated between the 19th and 20th centuries and was renamed only later by Wiliam Folks under the name of Special Cuvée. This champagne is considered a real milestone in the French winemaking tradition, so much so that the finest palates have celebrated it for its excellent qualities, calling it the emblem of non-vintage sparkling wine. The blend sees vintage wines conjugated with Pinot Noir (60%), Chardonnay (25%) and Pinot Meunier (15%). 85% of the vineyards derive from the Grand cru and Premier crus, a French expression used to designate the lands from which the best qualities of wines are born. The cultivation system called "en foule", that is, which prepares files without a specific order, uses a traditional method, using the strength of the horse and multiplication through offshoots. Before going on to sell the Bollinger Special Cuvèe sees a process of aging on yeasts that provides for a minimum duration of 3 years, while the maturation that takes place in the cellar in oak barrels is more than double the demand according to the provisions of the Denomination Champagne. The Bollinger Special Cuvée stands out for its refined straw-yellow color from which the unmistakable perlage emerges. In the eyes it appears decisive, treading the shades of the black vineyards. The nose is complex and ample with an aromatic and persuasive note. To the taste it is perceived toasted, full, an echo of biscuit emerges from which stands out the strong but elegant taste coming from the fruits in all its forms and colors. Excellent on the palate, it is manifested in all its macro and micro structure composed on the background of spicy aromas, while in the foreground the flavor of the pear, toasted fruit and peach stand out with an aftertaste that evokes the cooked apple.
