The 2002 vintage was characterized by a mild and dry climate. Both spring and summer have had wonderful sunny periods. Although there was no rain at the end of August, the dry wind and good weather that arrived in September made it possible for the grapes to ripen in excellent condition. The right amount of sun throughout September meant that the crop was perfectly ripe, while maintaining an excellent level of acidity. The season, even if late, is favorable for the processing of excellent red wines. The mixture was made using 80% Grand Cru Chardonnay - 72% of the Côte des Blancs (Avize, Cramant, Le Mesnil - sur - Oger) and 28% from the Montagne de Reims (Puisieulx, Sillery) - and 20% Pinot Noir made in red wine, from the cru Sillery and Verzenay. On the nose: The primary aroma of this vintage of champagne is surprisingly intense and complex, notes of exotic fruit (guava) and (red orange, cedar), citrus fruits mix with floral aromas such as violet and pink, with a touch of musc. Allowing him to breathe, he reveals notes of pimento followed by orange blossom, brioche, andzata, based on perfectly ripe red fruits. ON THE PALATE: The richness of the 2002 harvest boasts exceptional breadth and volume on the palate. It offers an excellent fruity, floral and spicy aromatic range. The low dosage leaves a final flowering of great purity, which expresses the nobility of the great cru that make up this cuvée. Dom Ruinart Rosé 2002 offers a refined persistent effervescence. PAIRING: Dom Ruinart Rosé 2002 will perfectly complete savory dishes such as lacquered pigeon, wild duck with chanterelles and sour cherries, or even a slow cooked veal cutlet accompanied by risotto with radicchio.
