The Maremma of Livorno is undoubtedly the soul of the Toscana Rosso Igt "Fred" of Rubbia al Colle ( Muratori ). The character, on the other hand, is more faceted and derives from the three vines that compose it. Petit Verdot from the hills with early ripening, Syrah from the foothills with more humid terri and Sangiovese from the warmer and more ventilated areas near the sea. But the peculiarity that makes this wine truly unique is the vinification carried out almost like a white wine. The final purpose of this procedure is to obtain a delicate extraction of tannins without affecting in any way the aromatic aspect of the grapes. No more than 2 days of maceration and then several months of aging in cask. Bright red in color but not intense, with a slightly tannin that gives way to a rich and fruity aroma. Spice and balsamic notes are a pleasant side dish. Made in the same way as a white wine, it must be drunk cold ! Definitely a curious product.
