The newcomer from Serafini and Vidotto is produced by S auvignon, Pinot Bianco and Riesling. After having passed into steel, it is also allowed to refine in new barrels, before ending its course with 6/8 months in the bottle. The result is a crystalline and shiny product , with a straw-green hue, from which bright solar flares shine. The movement reveals agility and consistency. On the first nose it reveals elegant citrus and vegetable scents, with notes reminiscent of pink grapefruit, mandarancio, cedar and green apple, mint and tomato leaf. Then there is a definite opening on rock and flint minerality, which is gradually accompanied by sweet nuances of vanilla. The sip is definitely full and enveloping. At first citrusy freshness and balanced sapidity, then slowly the wine widens, showing a solid and well-sculpted structure enveloping roundness, turning slowly towards warm perceptions. The long taste-olfactory persistence fades on ample citrus notes, aromatic herbs and salty nuances.
El Blanco is ideal on crudités of crustaceans and molluscs, risotto with lagoon shrimps, trenette with pesto, fried scampi and squid, gratin asparagus. But marvelous companion of the best raw sweet cured hams: from S. Daniele to Parma, from Sauris to Montagnana.
